I have made this recipe three times since I discovered it. Yep, it is just that good! The original recipe called for this to be baked; however, it was much easier to air-fry. Additionally, I had basil pesto, which I used instead of the basil pesto. The original recipe is posted.
INGREDIENTS
- 2 6 oz. salmon filets
- 2 tsp. olive oil (to grease foil)
- 4 tsp. basil pesto
- 2 medium tomatoes, sliced 1/4 inch thick
INSTRUCTIONS
- Preheat oven to 450°F.
- Place a baking sheet in the oven to heat while you prep salmon.
- Tear pieces of foil large enough to wrap the salmon with some overlap.
- Place 2 tsp. of olive oil on top of each piece of foil, lay one on top of the other, and place the salmon on top.
- Spread each piece of salmon with 2 tsp. basil pesto
- Lay tomato slices over the pesto, so they cover the salmon.
- Wrap the salmon securely in foil, doubling over the seam and ends several times.
- Place salmon on heated baking sheet and bake 15 minutes.
- Remove the baking sheet from the oven and let the salmon rest 2-3 minutes.
- Open carefully and serve immediately while the salmon and tomatoes are still hot.
