I have been making this simple, easy dish for over a year. It is quick, healthy, and above all easy to prepare. I encourage you to try it, I guarantee you will make it often.
INGREDIENTS
1 1/2 pounds of asparagus
2 tbsp. fresh basil
1 1/2 cups of Cherry tomatoes
1/2 c. Balsamic vinegar
1 tsp salt and pepper
1 tbsp. EVOO
1/2 CUP Parmigiano Reggiano
Preheat the oven to 400F
Line a rimmed baking sheet with aluminum foil and spray lightly with cooking spray
Trim the asparagus and half the tomatoes
Place the asparagus on one side of the baking sheet and the tomatoes on the other. It takes about 15 to 20 minutes until they start to caramelize. About halfway through mix them.
Meanwhile simmer the balsamic vinegar until it starts to thicken, about 10 minutes
With 5 minutes remaining grate the cheese over the asparagus and tomatoes until it melts thoroughly and starts to form a crust. Please buy a block of cheese and grate it. The flavor is wonderful.
Remove from the oven and drizzle the balsamic vinegar over the asparagus and tomatoes. You may add more cheese if you would like.
Garnish with fresh basil
The last time I made this I used mozzarella cheese, it was just as tasty.
