Enjoy this unusual but tasty dish, it is savory and sweet. Serves eight.
INGREDIENTS
- 2 tablespoons of butter
- 1 yellow onion, sliced
- 3 tablespoons of water
- 1/3 cup apple cider vinegar
- 1/4 cup honey
- 1 medium head red cabbage, cored and sliced thin
- 1 firm pear, thinly sliced
- 1 tablespoon Kosher salt
- 1/4 tablespoon ground black pepper
- 1/4 teaspoon ground cloves
- dried or fresh dill for garnish
INSTRUCTIONS
- In a large Dutch oven or heavy=bottomed pot, heat the butter over medium-low heat. Add the onions and cook for 5 minutes, or until the onions begin to soften.
- Add water, cider vinegar, and honey to the onions and butter, and stir to combine. Add the cabbage, pear slices, salt, pepper, and cloves, gently mix everything together. It may look dry but do not add extra liquid as the cabbage and pears will create liquid as they cook.
- Cover with a lid and simmer for 1 hour, stirring occasionally. (Cook longer if you want the cabbage to be more tender).
- Season with salt and pepper to taste. Garnish with fresh or dried dill before serving (optional).
