I eat a lot of sweet potatoes, so I decided to try candied carrots. I have had them before, but the ingredients of the glaze caught my eye.
Prep time: 5 minutes Cook time: 30 minutes Servings: 4
INGREDIENTS
- 3 cups baby carrots
- 1/4 cup butter
- 1/4 cup honey
- 1/4 cup brown sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
INSTRUCTIONS
- Boil the carrots until tender, and drain.
- In a skillet, melt butter on medium heat. Stir in the honey, brown sugar, cinnamon, salt, and cayenne pepper.
- Bring the glaze to a boil and continue to cook, stirring constantly for a few minutes. The glaze should reduce and thicken.
- Dump in the carrots and stir so they are well coated with the glaze.
- Reduce the heat to a simmer and continue to cook for another 5 minutes, stirring often.
- Serve.
