I eat a lot of sweet potatoes, so I decided to try candied carrots. I have had them before, but the ingredients of the glaze caught my eye.

Prep time: 5 minutes Cook time: 30 minutes Servings: 4

INGREDIENTS

  • 3 cups baby carrots
  • 1/4 cup butter
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper

INSTRUCTIONS

  1. Boil the carrots until tender, and drain.
  2. In a skillet, melt butter on medium heat. Stir in the honey, brown sugar, cinnamon, salt, and cayenne pepper.
  3. Bring the glaze to a boil and continue to cook, stirring constantly for a few minutes. The glaze should reduce and thicken.
  4. Dump in the carrots and stir so they are well coated with the glaze.
  5. Reduce the heat to a simmer and continue to cook for another 5 minutes, stirring often.
  6. Serve.
