This cheesy creamy sweet corn casserole would be a great addition to any holiday feast or family gathering. Sweet and Cheesy!

INGREDIENTS

  • 2 tablespoons unsalted butter
  • 1 medium green chili pepper, chopped, and seeded
  • 2 cloves garlic, finely chopped
  • 2 cans 15-oz whole kernel corn, drained
  • 2 cups 8oz. cream cheese
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/3 teaspoon ground black pepper
  • 1/2 cup breadcrumbs
  • 1/2 cup thyme, sage, or parsley, finely chopped

DIRECTIONS

  1. Preheat the oven to 375 F. Melt the butter in a skillet over medium heat. Add the chopped chili pepper and garlic, stir for 3-5 minutes until fragrant.
  2. Add the corn, cream cheese, and half of the mozzarella cheese, with the cheddar cheese. Stir constantly until the cheese melts. Season with salt and pepper to taste.
  3. Pour the corn mixture into a butter-greased 9×13 inch baking dish and smooth the surface with a spoon. Top with breadcrumbs, the remaining mozzarella cheese, and chopped herbs.
  4. Bake the casserole for 25 to 30 minutes, or until the cheese is melted and crisp on top. Serve immediately with additional chopped herbs or green onions.
