This cheesy creamy sweet corn casserole would be a great addition to any holiday feast or family gathering. Sweet and Cheesy!

INGREDIENTS
- 2 tablespoons unsalted butter
- 1 medium green chili pepper, chopped, and seeded
- 2 cloves garlic, finely chopped
- 2 cans 15-oz whole kernel corn, drained
- 2 cups 8oz. cream cheese
- 3/4 cup shredded mozzarella cheese
- 3/4 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/3 teaspoon ground black pepper
- 1/2 cup breadcrumbs
- 1/2 cup thyme, sage, or parsley, finely chopped
DIRECTIONS
- Preheat the oven to 375 F. Melt the butter in a skillet over medium heat. Add the chopped chili pepper and garlic, stir for 3-5 minutes until fragrant.
- Add the corn, cream cheese, and half of the mozzarella cheese, with the cheddar cheese. Stir constantly until the cheese melts. Season with salt and pepper to taste.
- Pour the corn mixture into a butter-greased 9×13 inch baking dish and smooth the surface with a spoon. Top with breadcrumbs, the remaining mozzarella cheese, and chopped herbs.
- Bake the casserole for 25 to 30 minutes, or until the cheese is melted and crisp on top. Serve immediately with additional chopped herbs or green onions.
