This is an easy-to-prepare recipe that is so flavorful. Marinate for 2-6 hours, however, for the best flavor marinate overnight.
INGREDIENTS
- 2 pounds of boneless, skinless chicken thighs, cut into 1.5 to 2inch pieces
- 2 tbsp. of olive oil
- salt and pepper
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1 tbsp. paprika
- 1 tbsp. chili flakes
- 1.5 tbsp. tomato paste
- 2 tbsp. sour cream
- juice of a small lemon
WHITE SAUCE
- 4 garlic cloves, minced
- 2 tbsp. mayonnaise
- 2 tbsp. sour cream
- 1-2tbsp. parsley
- zest of 1/2 lemon
- salt and pepper
DIRECTIONS
- Coat chicken with olive oil, combine remaining ingredients and mix in chicken pieces. Place in refrigerator and marinate for desired time.
- Remove chicken from refrigerator and let it sit for 30-35 minutes to bring to room temperature. Heat oven to 400 F.
- Place chicken on skewers, (add peppers and onions to skewers if desired) and bake for 30-35 minutes.
WHITE SAUCE
- While the chicken is baking prepare the white sauce.
- Mix all ingredients and taste, add more lemon if needed.
- Thin out the sauce with 1-2 tbsp. water if it is too thick.
- Drizzle sauce over baked chicken and top with parsley.
Serve with sides of your choice.
