INGREDIENTS

  • 1 lb. shrimp, shells, deveined, tails on
  • 2 tablespoons olive oil
  • 4 cloves minced garlic
  • 1 tablespoon honey
  • 1 1/2 tablespoons lime juice
  • 1/2 teaspoon Chipotle Chili Pepper Powder
  • 1/4 teaspoon salt
  • 1 tablespoon parsley or cilantro, chopped
  • fresh lime wedges

INSTRUCTIONS

  1. Rinse the shrimp under cold water, then drain and pat dry with paper towels. Set aside.
  2. Heat a skillet (cast iron is best) over medium heat and add the olive oil. Once the oil is hot, add the garlic and sauté briefly with a spatula. Add the shrimp to the skillet, stirring and cooking them. Continue stirring and turning the shrimp to ensure both sides are evenly cooked.
  3. Add the parsley or cilantro and stir to combine. Turn off the heat and immediately serve with fresh lime wedges. Squeeze lime juice over the shrimp before eating.
