INGREDIENTS
- 1 lb. shrimp, shells, deveined, tails on
- 2 tablespoons olive oil
- 4 cloves minced garlic
- 1 tablespoon honey
- 1 1/2 tablespoons lime juice
- 1/2 teaspoon Chipotle Chili Pepper Powder
- 1/4 teaspoon salt
- 1 tablespoon parsley or cilantro, chopped
- fresh lime wedges
INSTRUCTIONS
- Rinse the shrimp under cold water, then drain and pat dry with paper towels. Set aside.
- Heat a skillet (cast iron is best) over medium heat and add the olive oil. Once the oil is hot, add the garlic and sauté briefly with a spatula. Add the shrimp to the skillet, stirring and cooking them. Continue stirring and turning the shrimp to ensure both sides are evenly cooked.
- Add the parsley or cilantro and stir to combine. Turn off the heat and immediately serve with fresh lime wedges. Squeeze lime juice over the shrimp before eating.
