This is not only a quick and easy meal but a healthy one. The tuna patties are crispy on the outside but tender on the inside.

INGREDIENTS
- 3 (10 ounce) chunk tuna in water, drained
- 1 large egg
- 1/2 small onion finely chopped
- 2 tbsp. fresh Italian parsley finely chopped
- 1 tbsp. mayonnaise
- 1 tsp. Sriracha sauce (optional)
- 1/2 small lemon zested and juiced
- 1/4 tsp. Kosher salt
- 2/3 cup dry breadcrumbs
- 3 tbsp. avocado oil or your preferred oil
DIRECTIONS
- Add the tuna to a large bowl, and stir in the onion and parsley.
- In a smaller bowl, whisk together the egg, mayo, Sriracha sauce, lemon zest, and lemon juice.
- Add the liquid mixture to the tuna mixture and stir together. Add the breadcrumbs and use your hands to combine and mix evenly.
- Divide the mixture into 4 equal portions, about 1/2 cup each. Shape into 4 patties, about 1 inch thick. Refrigerate patties for 15 minutes.
- Heat the oil over medium heat. Gently lay the patties in the pan. Cook until browned, about 3-4 minutes on each side. Season with additional salt and pepper to taste. Serve warm.
