This is not only a quick and easy meal but a healthy one. The tuna patties are crispy on the outside but tender on the inside.

INGREDIENTS

  • 3 (10 ounce) chunk tuna in water, drained
  • 1 large egg
  • 1/2 small onion finely chopped
  • 2 tbsp. fresh Italian parsley finely chopped
  • 1 tbsp. mayonnaise
  • 1 tsp. Sriracha sauce (optional)
  • 1/2 small lemon zested and juiced
  • 1/4 tsp. Kosher salt
  • 2/3 cup dry breadcrumbs
  • 3 tbsp. avocado oil or your preferred oil

DIRECTIONS

  1. Add the tuna to a large bowl, and stir in the onion and parsley.
  2. In a smaller bowl, whisk together the egg, mayo, Sriracha sauce, lemon zest, and lemon juice.
  3. Add the liquid mixture to the tuna mixture and stir together. Add the breadcrumbs and use your hands to combine and mix evenly.
  4. Divide the mixture into 4 equal portions, about 1/2 cup each. Shape into 4 patties, about 1 inch thick. Refrigerate patties for 15 minutes.
  5. Heat the oil over medium heat. Gently lay the patties in the pan. Cook until browned, about 3-4 minutes on each side. Season with additional salt and pepper to taste. Serve warm.
