A set it and forget it slow cooker dinner. This easy slow cooker meal produces a juicy tender, meatloaf with French onion flavor.

Prep Time: 15 minutes

Cook Time: 5 hours-6 hours on low or 2.5 – 3 hours on high. (I cooked mine on low for 5 hours)

Rest time: 5 minutes

INGREDIENTS

  • 1 tablespoon butter
  • 2 yellow onions, sliced
  • 2 pounds lean ground beef
  • 1 envelope beefy onion soup mix
  • 3/4 cup Italian bread crumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 2 cups shredded Swiss cheese, divided
  • 10.5 oz. can French onion soup
  • 1 tablespoon chopped parsley, optional for garnish

INSTRUCTIONS

  1. Melt the butter in a skillet over medium heat. Add the sliced onions and sauté over medium-low heat until caramelized and soft (about 10 minutes). Watch the onions closely as they cook so they don’t burn or get too brown.
  2. Add the onions to the bottom of the crock pot.
  3. In a large mixing bowl, stir together the ground beef, beefy onion soup mix, bread crumbs, eggs, milk, Worcestershire sauce, and half of the shredded cheese.
  4. Form the mixture into a loaf and place it in the crock pot on top of the onions.
  5. Pour the French onion soup over the top of the meatloaf.
  6. Cover and cook on low for 5-6 hours or on high for 2.5 – 3 hours.
  7. Top with the remaining shredded cheese. Cover and cook until the cheese is melted.
  8. Let the meatloaf rest for at least 5 minutes.
  9. Carefully remove the meatloaf from the crock pot. Top with fresh parsley if using.
