A set it and forget it slow cooker dinner. This easy slow cooker meal produces a juicy tender, meatloaf with French onion flavor.
Prep Time: 15 minutes
Cook Time: 5 hours-6 hours on low or 2.5 – 3 hours on high. (I cooked mine on low for 5 hours)
Rest time: 5 minutes
INGREDIENTS
- 1 tablespoon butter
- 2 yellow onions, sliced
- 2 pounds lean ground beef
- 1 envelope beefy onion soup mix
- 3/4 cup Italian bread crumbs
- 2 large eggs
- 1/2 cup milk
- 1 tablespoon Worcestershire sauce
- 2 cups shredded Swiss cheese, divided
- 10.5 oz. can French onion soup
- 1 tablespoon chopped parsley, optional for garnish
INSTRUCTIONS
- Melt the butter in a skillet over medium heat. Add the sliced onions and sauté over medium-low heat until caramelized and soft (about 10 minutes). Watch the onions closely as they cook so they don’t burn or get too brown.
- Add the onions to the bottom of the crock pot.
- In a large mixing bowl, stir together the ground beef, beefy onion soup mix, bread crumbs, eggs, milk, Worcestershire sauce, and half of the shredded cheese.
- Form the mixture into a loaf and place it in the crock pot on top of the onions.
- Pour the French onion soup over the top of the meatloaf.
- Cover and cook on low for 5-6 hours or on high for 2.5 – 3 hours.
- Top with the remaining shredded cheese. Cover and cook until the cheese is melted.
- Let the meatloaf rest for at least 5 minutes.
- Carefully remove the meatloaf from the crock pot. Top with fresh parsley if using.
