This delicious crockpot corn chowder is easy to make and oh so good!
INGREDIENTS
- 1/2-pound bacon, cooked util crispy and crumble
- 5medium sized Russet potatoes, unpeeled, diced in 1/4-inch cubes
- 6 cups corn (can use frozen)
- 1 large sweet yellow onion
- 1 cup chopped celery
- 5 garlic cloves, crushed
- 1/2 tsp. seasoned salt
- 4 cups chicken stock
- 2 cups half and half or heavy cream
- salt and pepper to taste
INSTRUCTIONS
- Combine all ingredients except half and half in slow cooker.
- Cook on low for 8-10 hours or high for 4-6 hours.
- Blend half the soup using an immersion blender or scoop into an upright blender.
- Add half and half or heavy cream and continue cooking, uncovered, for another 15 minutes, until heated through. Salt and pepper to taste.
