This delicious crockpot corn chowder is easy to make and oh so good!

INGREDIENTS

  • 1/2-pound bacon, cooked util crispy and crumble
  • 5medium sized Russet potatoes, unpeeled, diced in 1/4-inch cubes
  • 6 cups corn (can use frozen)
  • 1 large sweet yellow onion
  • 1 cup chopped celery
  • 5 garlic cloves, crushed
  • 1/2 tsp. seasoned salt
  • 4 cups chicken stock
  • 2 cups half and half or heavy cream
  • salt and pepper to taste

INSTRUCTIONS

  1. Combine all ingredients except half and half in slow cooker.
  2. Cook on low for 8-10 hours or high for 4-6 hours.
  3. Blend half the soup using an immersion blender or scoop into an upright blender.
  4. Add half and half or heavy cream and continue cooking, uncovered, for another 15 minutes, until heated through. Salt and pepper to taste.
