This is crockpot season, and this recipe is super easy to prepare for a flavorful delicious meal. Just add some nice toasty bread and dinner is ready !

INGREDIENTS

4 boneless chicken breasts

4 Russet potatoes cut into 2-inch pieces

2 cups baby carrots

1 packet dry ranch dressing mix

1 can cream of chicken soup (10oz can)

1 cup milk

DIRECTIONS

  1. In a mixing bowl, add the cream of chicken soup, milk, and ranch dressing mix. Whisk together until well blended.

2. Season chicken breasts lightly with kosher salt and fresh ground pepper.

3. Place breasts in crockpot, add the potatoes, and carrots. Pour soup mixture over the chicken and vegetables.

4. Cook on low for 6-8 hours or on high for 3-4 hours. If you want the chicken to be in smaller pieces shred it after cooking.

note: The sauce seems to separate during the cooking process, remove the vegetables and whisk it. Return the vegetables to the crockpot and serve with parsley sprinkled over the top.
