INGREDIENTS
- 1 lb. boneless chicken breast or thighs (cut into small cubes)
- 2 cups cabbage (shredded or chopped)
- 1/2 cup carrots (julienne or chopped)
- 1 tbsp. curry powder
- 2 tsp. turmeric powder
- 1/2 tsp. ginger flavoring
- 1 tsp. thyme leaves
- 2 cloves garlic
- 1/4 tsp. cumin
- 1 stalk scallion
- 1 scotch bonnet pepper (or milder pepper)
- 4 pimento berries
INSTRUCTIONS
- Clean and wash chicken, cut into small pieces or cubes and set aside.
- Season chicken with all-purpose seasoning, curry powder, turmeric powder, pimento berries, ginger flavoring. onion, garlic, scallion, and cumin. Set aside to marinate 1-2 hours.
- Heat oil in a frying pan, place the chicken in the oil and stir-fry for 10 minutes. Remove from heat.
- Add shredded cabbage and carrots and stir in the same frying pan. Allow the cabbage to steam for 5-7 minutes until the cabbage has slightly shrunk.
- Add the chicken to the cabbage, add thyme leaves and scotch bonnet pepper and toss to combine. Allow to cook for another 5-7 minutes.
- Remove from heat and serve.
