Cinnamon has a distinct strong, spicy-sweet flavor and an easily recognizable smell. There are four major species of cinnamon, c bummannii,( Indonesian cinnamon), c verum,( Ceylon cinnamon), c loureiroi, (Saigon cinnamon), and c cassia (Chinese cinnamon). In North America cassia is prevalent and the type you will find in your local grocery store.

Cassia which has a history of being used in traditional medicine, has health effects such as antitumor, anti-inflammatory, anti-diabetic, antibacterial, antiviral, and cardiovascular protective effects. It is a dark red-brown color and has a thick skin. However, be aware of how much cassia cinnamon you consume, as it contains high amounts of coumarins. Coumarins are a chemical compound that can be toxic in high doses. Small doses are considered safe for the average healthy adult. The common side effects of cinnamon are gastrointestinal problems or allergic reactions.
