I was speaking with a friend and we started to discuss exploring new and different recipes. We all get tired of eating the same thing day in and day out. Today’s featured recipe is one I tried a year ago. It is fresh, healthy, and the ideal salad for Sunday Brunch.

Total time to prepare this dish is 10 minutes.

INGREDIENTS:

1/2 lime, juiced and zested

4 tbsp. olive oil, divided

1/2 tbsp. honey

1 tsp kosher salt

1/4 tsp. pepper

1 lb. wild caught salmon

5 oz. Spring Mix

2 grapefruits, supremed ( supreming is removing the membrane from the flesh of the grapefruit)

2 avocados sliced

4 green onions, sliced

DIRECTIONS:

1. In a small bowl, whisk lime juice, lime zest, 2 tablespoons olive oil, honey, 1/4 tsp salt and 1/4 tsp pepper until dressing holds together

2. I a large sauté pan, heat remaining oil to medium high

3. Season salmon with remaining salt and pepper. Sear for 3 minutes each side. ( Do not overcook)

4. Rinse and chop lettuce, place on serving platter5. Layer lettuce with grapefruit and avocado. Place salmon on top, garnish with green onions.

If you are not a fan of grapefruit and/or avocado, they can be substituted.

  • Sounds like a winner for a quick but satisfying meal. I don’t know how I feel about ‘supreming” grapefruit, lol!

  • Have you ever thought about including a little bit more than just your articles? I mean, what you say is valuable and everything. But think about if you added some great visuals or video clips to give your posts more, “pop”! Your content is excellent but with pics and video clips, this blog could undeniably be one of the best in its niche. Excellent blog!
