This is a very easy dish to prepare it is flavorful and can be made in thirty minutes. Please be careful not to overcook the salmon, if you do it will become rubbery. We are going to prepare this as a one pan meal.
Ingredients
4 (6oz) salmon fillets
4 to 6 cups broccoli florets ( you can also use asparagus, or snap peas)
4 garlic cloves minced
6 tbsp. unsalted butter, melted
1 tbsp. light brown sugar
1/2 tsp oregano
1/2 tsp dried thyme
1/2 tsp dried rosemary
salt and pepper to taste
1 lemon, halved
chopped parsley, for garnish
Preheat oven to 400F
Grease a sheet pan with cooking spray
Arrange the broccoli florets and salmon fillets on the pan ( if using root veggies bake them 10 minutes before adding salmon )
Rub the minced garlic over the fillets, set aside
In a mixing bowl whisk together melted butter, brown sugar, oregano, thyme, and rosemary.
Pour the butter mixture over the broccoli and salmon
Take one half of the lemon and squeeze lemon juice over everything, then season with salt and pepper.
Place the sheet pan in the oven and cook for 15 minutes, or until the fish flakes easily with a fork.
Remove from the oven and garnish with parsley , serve with lemon slices.
