INGREDIENTS

CHICKEN:

  • 4 boneless, skinless chicken breast
  • 1 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • vegetable oil for frying

HOT HONEY SAUCE

  • 1/2 cup honey
  • 2 tablespoons hot sauce
  • 1 tablespoon butter
  • 1/4 teaspoon cayenne pepper (or more to taste)

ASSEMBLY:

  • 4 brioche buns
  • 8 pickle slices
  • 1 cup coleslaw

INSTRUCTIONS:

  1. Pound chicken breast to an even thickness of 1/2 inch. Soak in buttermilk for 15 minutes.
  2. In a shallow dish, mix flour with paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat oil in a large skillet or deep fryer to 350°F.
  4. Dredge each piece of chicken in the seasoned flour, shaking off excess.
  5. Fry chicken for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
  6. For the hot honey sauce, combine honey, hot sauce, butter, and cayenne in a small saucepan. Heat over medium heat, stirring until butter is melted and sauce is well combined.
  7. Brush each piece of chicken generously with the hot honey sauce.
  8. Lightly toast the brioche buns.
  9. Assemble sandwiches: Place a piece of chicken on the bottom bun, top it with pickles and coleslaw, and cover it with the top of the bun.
