When I saw this recipe I knew I had to make it. I was not disappointed, the melding of sweetness, spicy, and savory flavors is perfect! The original recipe was written for an air fryer, however, it did include, directions for the grill and oven. I used my oven.
Prep Time: 15 minutes
Cook Time: 25 to 30 minutes
Total Time: 45 minutes
INGREDIENTS
15 wooden skewers, soaked in water for 30 minutes.
CHICKEN
- 2 pounds of boneless, skinless, chicken breasts, cut into 1-inch pieces
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 2 tablespoons extra virgin olive oil
SKEWERS
- 4 yellow fresh peaches, quartered, then halved, (32) pieces (do not use canned or frozen peaches)
- 3 medium jalapeno peppers. halved, seeded, and cut into chunks
PEACH GLAZE
- 1/2 cup peach preserves
- 1 tablespoon extra virgin olive oil
- 1 teaspoon soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic, minced
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
INSTRUCTIONS
- Preheat oven to 375 F. Line a baking sheet with parchment paper.
- Add chicken, salt, pepper, chili powder, and oil to a large bowl. Toss to coat.
- To prevent sticking brush the skewers with olive oil.
- To each skewer, thread peach, chicken, jalapeno, chicken, jalapeno, chicken, peach. Place the assembled skewers on the baking sheet.
- Cook the skewers for 25-30 minutes, flipping halfway through.
- Remove skewers from the oven and brush with the peach glaze.
PEACH GLAZE
- While the skewers are cooking, make the peach glaze. To a medium saucepan, add the glaze ingredients. Mix until incorporated and continue to cook until warmed through.
- When the skewers are done, brush them generously with the glaze. Serve warm.
note: For air fryer: Preheat to 375 F assemble skewers and place in a single layer of the basket. Air fry for 11-12 minutes.
For grill: Assemble skewers. Grill over medium-high heat for 8-10 minutes per side.
