Here it is nearly summer, and you may wonder why I wish to share with you a recipe for lemon honey tea. In the last month, I have been drinking it to soothe seasonal allergy systems. In northeast Ohio, everything is in bloom and our pollen count has been heavy. To add to that, we recently experienced a heavy smoke haze that drifted down from the wildfires in Canada. For me that produced symptoms of runny nose, cough, and throat irritation. If you are a follower, you are aware that I don’t use over the counter products. I seek a natural holistic solution, and this one works for me.

This tea is used frequently in Korea and other Asian countries to relieve the symptoms described above, in fact, it is known as Korean honey tea. It is readily available premade in Asian markets, but why not make it from scratch with fresh ingredients? The consistency may throw you for a loop, as the end product looks like a preserve. However, the fruity and warming taste will win you over. This will be your turn to solution for coughs and throat irritation.

The ingredients are as follows:

Organic lemons

apple cider vinegar

raw honey

8-ounce Mason jars with lid

DIRECTIONS

  1. Thoroughly wash the lemons, then place them in a bowl of water to which 1 cup of ACV has been added. LLet the lemons sit for 20 minutes, remove them and rinse them off.
  2. After rinsing, slice the lemons and place the slices in the Mason jars..
  3. Pour honey over the lemons until they are completely covered. If your honey is thick which happens with raw honey, liquefy it by placing it in hot water. Do not place it in the microwave. Over time, the lemons will dissolve into the honey.
  4. Close the jar and refrigerate.
  5. Add one spoonful of the honey mixture to a cup of hot water. If you find your mixture is too runny, jump the jars into a pan, add some pectin, and bring to a rolling boil for a few minutes. That should firm it up.

Pectin is an all-natural ingredient found in any grocery store; it is commonly used in cough drops. The number of lemons and amount of honey you need will depend on the number of jars you wish to fill.
