A massage???? Sounds good to me right about now and probably to you too. However, we are talking food here, specifically kale. Never heard of massaged kale? Neither had I until I was looking for interesting recipes and fell upon this one. This is an easy to prepare recipe.

INGREDIENTS

1 small onion, cut in thin slices

2 garlic cloves, minced

Salt and fresh ground pepper

1/4 cup wine

1 cup wild rice, soaked overnight in 4 cups water …. note: if you are not using wild rice, skip the overnight soak

4 cups kale, midribs stripped, well dried, and cut in 1/4 inch ribbons

1 ball (8oz) fresh mozzarella

1/4 cup sour cream

1 lemon zest, and juice

1 pint cherry tomatoes , halved

EVOO

DIRECTIONS

1. Heat 1 tbsp. EVVO. Sweat the onions and garlic with salt until translucent, about 5 minutes.

2. Add the wine, reduce by half. Add the wild rice and the soaking liquid and cook until tender, about 45 minutes.

3. In a mixing bowl, sprinkle the kale with a pinch of salt. Massage the kale until it is dark green, limp, and tender ( the length of time it takes to tenderize depends on the age of the greens)

4. Tear the mozzarella into chunks.

5. Combine the sour cream, lemon zest and juice, pinch of salt, and a couple of grinds of black pepper.

6. When the wild rice is cooked, drain any residual liquid and let cool.

7. Toss the tomatoes, kale, and wild rice together with olive oil and a pinch of salt. Taste and adjust the seasoning. Dot with the creamed mozzarella and serve.

You can now impress your friends with your knowledge of massaging kale, lol.
