After discovering this recipe, I will probably never use store-bought sauce again. The freshness of the tomatoes, mixed with herbs and spices is scrumptious. You may use store-bought Italian seasoning, but I would encourage you to use fresh herbs. Remember to place the herbs on the palm of your hand and smack them to release their oils. This recipe is all to taste so there are no measurements. Serve over pasta or atop a baguette topped with parmesan cheese.

INGREDIENTS

2# Roma tomatoes

fresh basil

fresh thyme

grated garlic

fresh rosemary

fresh sage

fresh oregano

red pepper flakes

Kosher salt

fresh ground pepper

EVOO (extra virgin olive oil)

DIRECTIONS

  1. Place herbs and spices in a large bowl, if using fresh herbs be sure it’s cut into small pieces. Grate tomatoes and combine well with herbs and spices.

2. Add olive oil and mix well
