This recipe is easy to make and flavorful with a few simple ingredients. I planned to cook it on the grill. but Mother Nature prevented that. Turns out it was delicious baked in the oven.

INGREDIENTS

  • 4 large boneless chicken breast. filleted
  • 2 cups frozen corn, or use 2 cans corn, drained
  • 2 cans of Black beans.drained
  • 8 teaspoons of Taco seasoning
  • 2 cups salsa
  • 2 cups shredded cheddar cheese

DIRECTIONS

  1. Coat 8 large pieces of heavy-duty aluminum foil with a non-stick cooking spray.
  2. Place a chicken fillet on each piece of foil.
  3. Top with 1/4 cup of corn and 1/4 cup Black beans, sprinkle each filet with 1 teaspoon of Taco seasoning.
  4. Top with 1/4 cup salsa, and fold the sides to make a packet.
  5. Place on the grill for 20-25 minutes, or bake in the oven at 425 F for 25 minutes.
  6. Carefully open the packets and top each filet with 1/4 cup of cheese.
  7. Seal the packets and place them on the grill or in the oven for 5 minutes, or until the cheese is melted.
  8. Carefully open the packets and garnish them with your choice of toppings.
