This recipe is not my own. I follow a chef online Samuel Marshall and from the moment he made his version of shrimp and grits I have used no other. The taste is just phenomenal.
Ingredients
grits ( old fashioned, not the 5 minute ones)
old bay
7 large shrimp ( shell and tail removed)
milk or cream
garlic ( roasted, to roast place 2 cloves in a 350 oven on a roasting pan, roast until cloves turn a little dark. Just about a minute)
sea salt and fresh black pepper
green onion ( diced small )
smoked white cheddar cheese
fresh parmesan white pepper
bacon ( 2 slices)
butter
Prep all ingredients before you start. Remove the shell and tail of shrimp. wash and pat dry. Season with fresh ground pepper and old bay. Set aside. Mince roasted garlic cloves. Grate smoked white cheddar cheese and parmesan. Place 2 tbsps. of butter in small dish.
Fry the bacon in a pan. Remove and place on a paper towel to drain. Save the grease.
Add 1 cup of milk or cream to pot, bring to a boil, reduce the heat and add the grits a little at a time while whisking. Whisk while adding the remaining grits in a little at a time. When the grits start to thicken add more milk while whisking. You want to keep adding milk and whisking until the grits are creamy. This is a process and cannot be rushed. Add sea salt 1/2 tsp, 2 tbsp. old bay, the garlic, 1 tsp white pepper and fresh pepper. Whisk while adding the ingredients. Add a little smoked white cheddar, continue to whisk. If the grits start to thicken add more milk a small amount at a time and continue to whisk. Add the parmesan and continue to whisk until your grits are creamy. Remove them from the heat and set aside.
Heat your bacon grease and add the shrimp. DO NOT OVERCOOK. Shrimp cook rapidly and you don’t want them to be tough. Turn once. Place on paper towel to drain. Lower the heat under the grease and add the butter until it browns.
Place the grits back on the heat and reconstitute with milk while whisking.
Ready to plate ! I use a wide bowl , ladle in the grits, top with some of the crumbled bacon. Place some of the green onion over the bacon. Place shrimp on top of that. Make it look attractive, if it looks good, half the battle is won. Place remaining bacon and then green onion over the shrimp. Use a small spoon and trim the inside of your bowl with the butter sauce.
