This recipe takes some time, you cannot be in a hurry. Secondly use the Old Fashioned grits, not the 5 minute ones. Also prep all the ingredients before you start. You will never want to prepare Shrimp N Grits a different way again!
Serves 5
INGREDIENTS
1 lb. extra large peeled and deveined shrimp
1 lb. bacon
1 1/2 cup Old Fashioned Grits
1 quart cream ( keep this nearby while cooking grits)
3 cloves roasted garlic
1 tbsp. white pepper
1 tsp. sea salt ( more to taste)
fresh black pepper
1 tbsp. smoked white cheddar cheese, shredded
1/3 cup fresh parmesan cheese
Old Bay seasoning
2 tbsp. butter
green onions for topping, chopped
INSTRUCTIONS
Heat oven to 350 F, place garlic in oven, roast for 2-3 minutes until color darkens. Remove and mince
Season the shrimp with Old Bay and black pepper, set aside
Gently boil 6 cups of cream, when it starts to boil, add the grits a little at a time while stirring with a whisk.
Lower the heat and continue to whisk grits, add more cream as grits start to thicken, continue to whisk.
Add 3 tbsp. of Old Bay while continually whisking mixture. Whisk in each of the following ingredients one at a time. Add salt, add white pepper, roasted garlic, white cheddar and parmesan.
Continue to whisk mixture, adding cream until the grits are totally smooth and no grit can be seen. Remove grits from heat and set aside.
Fry bacon to a crisp, place on paper towel to drain, then crumble
Fry the shrimp in the bacon grease until pink, remove from the grease and set aside
Add the butter to the grease and stir until the butter browns
Return the grits to a low heat and reconstitute them with cream, adding a little at a time.
Alright ya’ll the important part, plating!
Add grits to each bowl, place some of the crumbled bacon in the center of the bowls with some green pepper. Next place 5 shrimp around the bacon and make it pretty. Add more green onion and bacon atop the shrimp.
With a tablespoon drizzle the brown butter sauce around the outer ring of the bowls.
