This is a delicious, easy-to-make dish your whole family will enjoy. Serves six. You can change the chili powder and cumin seasoning for a different taste.
INGREDIENTS
- 6 medium sweet potatoes
- 1 tbsp. olive oil
- Salt and pepper to taste
- 1 ib. ground beef or other ground meat
- 1/2 diced red onion
- 3 cloves garlic minced
- 1 tbsp. chili powder
- 1 tbsp. cumin
- 3 ounces fresh spinach, chopped
- 1 cup shredded cheese (Monterey Jack, etc.)
- Fresh Italian Parsley to serve
INSTRUCTIONS
- Preheat your oven to 400℉ (200℃).
- Wash and prick the sweet potatoes with a fork. Rub with olive oil and sprinkle with salt and pepper.
- Wrap in foil and bake for 45-60 minutes or until tender.
- While the potatoes bake, cook the ground beef in a skillet over medium-high heat until browned. Drain any excess fat.
- Add the red onion and garlic to the skillet and cook until softened.
- Stir in the spinach and cook until it is wilted season with salt and pepper.
- Once the potatoes are done, slice them open lengthwise. Fluff the sides with a fork and add a small pat of butter to each.
- Spoon the beef filling into each potato.
- Top with shredded cheese and bake for another 5 minutes, or until cheese is melted.
- Garnish with fresh parsley to serve.
