This is a delicious, easy-to-make dish your whole family will enjoy. Serves six. You can change the chili powder and cumin seasoning for a different taste.

INGREDIENTS

  • 6 medium sweet potatoes
  • 1 tbsp. olive oil
  • Salt and pepper to taste
  • 1 ib. ground beef or other ground meat
  • 1/2 diced red onion
  • 3 cloves garlic minced
  • 1 tbsp. chili powder
  • 1 tbsp. cumin
  • 3 ounces fresh spinach, chopped
  • 1 cup shredded cheese (Monterey Jack, etc.)
  • Fresh Italian Parsley to serve

INSTRUCTIONS

  1. Preheat your oven to 400℉ (200℃).
  2. Wash and prick the sweet potatoes with a fork. Rub with olive oil and sprinkle with salt and pepper.
  3. Wrap in foil and bake for 45-60 minutes or until tender.
  4. While the potatoes bake, cook the ground beef in a skillet over medium-high heat until browned. Drain any excess fat.
  5. Add the red onion and garlic to the skillet and cook until softened.
  6. Stir in the spinach and cook until it is wilted season with salt and pepper.
  7. Once the potatoes are done, slice them open lengthwise. Fluff the sides with a fork and add a small pat of butter to each.
  8. Spoon the beef filling into each potato.
  9. Top with shredded cheese and bake for another 5 minutes, or until cheese is melted.
  10. Garnish with fresh parsley to serve.
