This Taiwanese Three Cup Chicken dish is juicy and full of flavor. The best part is that it takes only 20 minutes to prepare!

INGREDIENTS

  • 1 pound chicken thighs, drumsticks or a combination of chicken parts
  • 2 tablespoons sesame oil or toasted sesame oil
  • 2 inches of ginger root, peeled and cut into thin pieces
  • 6 cloves of garlic, peeled
  • 1 1/2 tablespoons soy sauce
  • 1 1/2 tablespoons dark sweet soy sauce
  • 1 1/2 tablespoons Shaoxing wine
  • 1 bunch Thai basil leaves

INSTRUCTIONS

  1. Heat a pan or pot over high heat and add the sesame seed oil. Add the chicken and stir-fry until the surface becomes slightly crispy and golden brown.
  2. Push the chicken to one side and add the ginger and garlic. Stir-fry until aromatic and mix well to combine.
  3. Add the soy sauce, dark sweet soy sauce, and Shaoxing wine. Mix well to combine, then cover with the lid, lower the heat, and simmer for 5-10 minutes.
  4. Add the basil leaves and stir-fry with the chicken until the basil is wilted. Serve immediately.
