I am known as the Queen of cooking from scratch using fresh ingredients, however even Queens need a break every now and then. This is my go to dish. It is easy to make, ready in less than 30 minutes, and full of flavor.
INGREDIENTS
1 tbsp. olive oil
2 garlic cloves, minced
2 cans ( 14 1/2 ounces) no salt added diced petite tomatoes, undrained
1 can (16oz) butter beans, drained and rinsed
6 cups fresh baby spinach (6 ounces)
1/2 tsp. Italian seasoning
1/4 tsp pepper
Hot cooked pasta (optional)
Grated Parmesan cheese
DIRECTIONS
In a large skillet, heat oil over medium high heat. Add garlic, cook and stir until tender, 30-45 seconds. Add tomatoes, beans, spinach, Italian Seasoning and pepper. Cook until spinach is wilted, stirring occasionally. Grate cheese over top. If desired serve with pasta ( works well with linguine or angel hair). You could also serve as a side dish with meat if you wish.
