One of my favorite dishes is Lasagna. This one is low in carbohydrates and full of savory flavor.
Ingredients
4 medium zucchini
3 cups tomato sauce
1 1/2 cups Ricotta cheese
1/2 cup Parmesan cheese
3 cups Mozzarella cheese
1/4 tsp ground pepper
1 pinch kosher salt
1 egg
1/4 cup fresh basil
3 garlic cloves
Directions
Prep zucchini …. salt and dry zucchini slices. Lay slices zucchini on paper towels with a little salt over top. Let sit for 10 minutes then dry by pressing down with paper towels.
Mix basil, egg, parmesan cheese, pepper, and minced garlic together in a bowl.
After salting and drying zucchini slices start layering lasagna in a 13×9 baking dish; thin layer of sauce, zucchini slices,basil, ricotta, and mozzarella cheese. Repeat until finished.
Top lasagna with sauce, mozzarella, and parmesan cheese. Bake at 350F for 40 minutes then broil for 1 minute to brown cheese. Top with fresh basil.
note: to reheat refrigerated lasagna, preheat oven to 350F and reheat for about 15 minutes until warm.
