This is a delicious way to prepare mushrooms, my first time trying them, but I will definitely be preparing them again. A quick, easy side dish.

INGREDIENTS

2 lbs. mushrooms ( I used Baby Bella Crimini)

1 tbsp EVOO

3 tbsp. Balsamic vinegar

2 tbsp. soy sauce

3 cloves garlic, chopped

1/2 tsp. thyme, chopped or 1/4 tsp. dried

Salt and pepper to taste

DIRECTIONS

  1. Preheat oven to 400 F
  2. Toss mushrooms in oil, vinegar, soy sauce, garlic, thyme, salt, and pepper.
  3. Arrange on a baking sheet
  4. Roast in oven until tender, about 20 minutes, mix about halfway through

There you go! Serve with your choice of meat and another side dish. I did shrimp and brown rice.
