Another great dish done in under 30 minutes, and no worries it is full of flavor! You can serve this dish as an appetizer, on slider buns, or as I did, a main dish.

INGREDIENTS
- 1 1/2 pounds boneless skinless chicken breast, diced into small cubes (thighs or ground chicken or turkey can substitute)
- 1 large egg
- 3/4 cup shredded mozzarella cheese
- 1/3 cup shredded cheddar cheese
- 1/3 cup all-purpose flour
- 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, finely minced)
- 1/2 teaspoon dried dill
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or totaste
- 2 tablespoons olive oil
INSTRUCTIONS
- To a large bowl, add all the ingredients, (except the olive oil), and stir to combine.
- To a large skillet, add the olive oil, and then the chicken in heaping 1 tablepoon sized mounds. Flatten as needed until it’s in a flatter shape.
- Fry for about 3 minutes on the first side, flip, and fry for 3 minutes on the second side. Make sure the skillet is large enough so the chicken is not crowded.
- Place chicken on paper towels to blot the oil. Serve hot with desired dips and sauces.
