Another great dish done in under 30 minutes, and no worries it is full of flavor! You can serve this dish as an appetizer, on slider buns, or as I did, a main dish.

Prep Time: 15 minutes Cook time: 6 minutes Total time: 21 minutes

INGREDIENTS

  • 1 1/2 pounds boneless skinless chicken breast, diced into small cubes (thighs or ground chicken or turkey can substitute)
  • 1 large egg
  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup all-purpose flour
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, finely minced)
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper, or totaste
  • 2 tablespoons olive oil

INSTRUCTIONS

  1. To a large bowl, add all the ingredients, (except the olive oil), and stir to combine.
  2. To a large skillet, add the olive oil, and then the chicken in heaping 1 tablepoon sized mounds. Flatten as needed until it’s in a flatter shape.
  3. Fry for about 3 minutes on the first side, flip, and fry for 3 minutes on the second side. Make sure the skillet is large enough so the chicken is not crowded.
  4. Place chicken on paper towels to blot the oil. Serve hot with desired dips and sauces.
