I’m back!!!! Some of you may know I had a fall and broke my left ankle; I will have no weight-bearing status for 3 months as it heals. However, as a friend of mine said, you can’t keep a good woman down. I figured out a way to maneuver around my kit. Today’s recipe tastes like apple pie on a pork chop. If you do not eat pork, you could substitute chicken. This is a quick and yummy dish.

INGREDIENTS

2 tablespoon butter, divided

4 boneless pork chops

3 tablespoons brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

4 medium tart apples, thinly sliced

2 tablespoons chopped pecans

DIRECTIONS

  1. In a large skillet, heat 1 tablespoon of butter over medium heat. Add pork chops; cook 4-5 minutes on each side or until a thermometer reads 145F. Meanwhile, in a small bowl, mix brown sugar, cinnamon, nutmeg, and salt.

2. Remove chops; keep warm. Add apples, pecans, brown sugar mixture, and remaining butter to the pan; cook and stir until apples are tender. Serve with chops.
