Some people are able to throw back a shot of apple cider vinegar daily with no problem, most of us struggle with getting down a spoonful. All kinds of vinegar should be diluted when consumed. Highly acidic vinegar such as ACV can do some severe damage to tooth enamel when sipped straight up. It is best to mix it with food or diluted into a cocktail.

If you want to boost your digestive health add ACV to your root vegetables. ACV has a powerful probiotic effect, but sautéing or boiling it with food will kill all the healthy bacteria. Making a healthy dressing for your root vegetables is an excellent way to ingest ACV. The following recipe serves 4

INGREDIENTS

2 sweet potatoes or yams, peeled and cubed

2 red or white potatoes, scrubbed and cubed

2 parsnips, scrubbed, core removed and cubed

2 beets scrubbed and cubed

1 large sweet onion, peeled and loosely chopped

3 large garlic cloves, peeled and loosely chopped

Olive oil for drizzling

Salt and pepper to taste

ACV DRESSING

2 tablespoons olive or avocado oil

4 tablespoons unfiltered apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon raw honey

1 shallot, finely minced

Himalayan salt and fresh ground pepper to taste

INSTRUCTIONS

  1. Preheat oven to 425F
  2. Heat your baking sheet in the oven for 5 minutes
  3. Toss all root vegetables, onion, and garlic with olive oil, salt, and pepper
  4. Spread vegetables on the heated baking sheet so they are not touching
  5. Roast for 20 to 30 minutes. Halfway through cooking time, turn veggies and continue to bake until fork tender.
  6. Meanwhile whisk together all ingredients for the dressing
  7. Remove roasted vegetables from the pan to a large bowl, toss the hot veggies with the vinaigrette and serve immediately.

Another way to ingest your ACV is to add it to your morning smoothies. Bananas, apples, and cinnamon are a great way to hide the taste of ACV. Because ACV helps you feel full, you may lose weight by reducing the amount of food you eat during the day.

Try this soothing immune boosting elixir. Organic, cold pressed ACV contains a matter called “must”. Must is the broken apple pieces that holds the “mother”, which is the colony of bacteria that work as probiotics when consumed. Drinking ACV shortens the duration of a cold as it thins out phlegm in the throat and moves mucous out of the respiratory system faster.
