OooooWeee is all I can say, the flavor that the combination of butter, use the real thing please, and herbs give to the pork chops is indescribably delicious. I had only boneless chops on hand, but I plan to make this again soon with bone-in chops. One more thing, please don’t overcook the chops, they will be dry and rubbery if you do.

INGREDIENTS

2 bone-in center cut chops 1/2 inch thick

1/2 Kosher salt, divided

1/2 teaspoon fresh ground pepper, divided

1 teaspoon smoked paprika

1/2 cup unsalted butter

4 cloves garlic, minced

1-pound green beans, trimmed

Fresh rosemary, 2 sprigs

Fresh thyme, 2 sprigs

DIRECTIONS

  1. Season both sides of pork chops with 1/4 teaspoon salt, and 1/4 teaspoon black pepper.

2. Heat a large heavy skillet over medium-high heat.

3. Melt butter in skillet. On one side add in pork chops and sear for 3 to 5 minutes on each side. On the other half of the skillet, add in green beans and sauté 7 to 10 minutes until tender-crisp while the pork chops cook on the other side.

4. Add garlic to butter in the bottom of the skillet and sauté with the green beans and cook for one minute. Spoon garlic butter over the chops. Check the temperature of the pork and continue cooking, if needed, until an internal temperature of 145 degrees F is reached. Place one sprig of rosemary and one sprig of thyme on top of each chop and let them wilt.

5. Serve hot and season to taste.
