Our country and even the world today are unstable. People are facing a future with fewer resources to access food and basic healthcare. However, it’s not the time to give up; it’s time to plan and prepare. I have grown a garden every year and can and freeze my produce to be sure I have staples in the winter. There is nothing like making a good pot of chili or spaghetti sauce with homegrown tomatoes.

Today, I want to share with you vegetables you can grow in 60 days or less. I already hear the chatter in my ear, some of you are thinking, I don’t have any place to grow vegetables, I live in an apartment. That is not the case. I lived in a studio apartment with a large picture window and grew flowers and vegetables in large pots or grow bags. I suggest you get potting soil made for pots and a few starter plants. The tag for care requirements will be in the starter pot.

You can harvest green onions (scallions) in 20 -30 days. Green onions grow fast; the first batch can be ready in 3 weeks when the stalks are 6 inches tall. In a one-square-inch space, you can grow up to 50 onions. You can start in the spring because they thrive in cool weather. You can have green onions all year, cut off the bottom, and set them in water, covering the roots. They will start to grow in a few days.

Radishes are another vegetable you can grow in 20-30 days. Plant them in early spring, and by late summer, you will have a full crop. Add them to salads for a little zest, roast them with root vegetables, or make a topping for spaghetti squash tacos.

Spinach is a cool-weather vegetable that you can plant in early spring or late summer. Spinach grows well in a raised bed garden. Harvest is between 45-60 days. There are multiple uses for spinach, from salads to breakfast omelets, one of my faves. Stored properly spinach can be saved up to a year.

The next vegetable that can be grown in 45-55 days is lettuce. Most varieties of lettuce sprout quickly. However, there are a few that take longer, like romaine. It can take 75-85 days to sprout. There are multiple uses for lettuce. A simple romaine lettuce salad is my go-to for a quick lunch. I like adding cherry tomatoes, different cheeses. avocado, and a zingy dressing.

The last quick-growing vegetable is summer squash, which grows in 50-60 days. There are multiple types of summer squash, like pattypan squash, which has a small, round, shallow shape with scalloped edges and a green, white, or yellow covering. Zucchini, familiar to most people, and cousa squash, a Middle Eastern squash that tastes similar to zucchini but is sweeter. I have made a zucchini lasagna before, and it was scrumptious.

Take heed and prepare for what may come. Grow bags are wonderful; they are made of a burlap-type material, and you can grow anything in them. There is nothing like having fresh produce that you know has no pesticides or other chemicals in your soil. I didn’t mention them, but tomatoes grow well in grow bags or large pots as well. It’s not too late to get started on a crop by the fall.
