If you love lobster bisque, you will want to make this easy, creamy, and delicious version. This is the season for warm heartwarming soups and stews. Pair this Bisque with a charcuterie board and toasted hardy bread and a nice bottle of red wine. Boo yah!
INGREDIENTS
1/2-pound l pound lobster meat cooked with shell if possible (or do as I did and use pre-cooked lobster meat)
1/4 butter divided
1/2 cup diced onion, divided
2 cups chicken broth
1/2 cup carrot, (diced)
1/2 cup diced celery
2 cloves minced garlic
1/3 cup white wine
1/3 cooking Sherry
1 tbsp. Worcestershire sauce
3 dashes tobacco sauce
3/4 teaspoon dried thyme
1 Bay leaf
2 ounces tomato paste
1 1/2 cups Half and Half or light cream
DIRECTIONS
Remove the meat from the shells and set aside (if using fresh lobster)
Melt two tablespoons of butter in a saucepan. Add shells and 1/4 cup onion and cook over medium heat until fragrant and lightly browned. Add chicken broth and simmer for 10 minutes, covered, Strain, discard shells, and set the lobster broth aside. Melt remaining butter over medium heat.
Add remaining onion, celery, and garlic, and cook until onion and garlic are softened. Add white wine and sherry and cook until almost evaporated. Add Worcestershire sauce and Tabasco sauce and cook until almost evaporated.
Stir in the lobster broth, Bay leaf, Thyme, and tomato paste. Simmer uncovered for 15 minutes or until thickened. Remove bay leaf and use immersion blender to make smooth.
Add in cream and simmer until thickened, about 3-5 minutes, stir in lobster meat and serve immediately. Garnish with chives if desired.
