One of the easiest and definitely flavorful sauces to make is vodka sauce. You can serve it with various types of pasta and add whatever you would like to it.

The recipe below is to make the basic vodka sauce. When I made it last week I added diced chicken. Ummm Ummm Good ! Be creative make it your own.

VODKA SAUCE

INGREDIENTS

2 cups marinara sauce ( I posted a few weeks ago how to make from scratch or use a jar variety)

1/2 cup vodka ( for those of you who don’t drink, alcohol dissipates when you cook with it)

add 1/4 cup heavy cream

pepper flakes 1/4 to 1/2 tsp to taste

2 tbsp. grated parmesan cheese

Cook together and reduce the marinara sauce and the vodka until you are back to 2 cups. ( you will have to eyeball this). Don’t rush the reduction and stir during the process.

add 1/4 c heavy cream

stir in pepper flakes

add 2 tbsp. grated parmesan

garnish with fresh basil

In order to make sure every noodle is saturated with sauce you have to marry the sauce to the pasta.

To your pot of sauce add some of the starchy pasta water. Bring to a slight boil, stirring to reduce liquid.

Serve with pasta of your choice.
