When I made this dish, I used a whole breast of chicken, since that is what I had. This is a quick delicious dinner made in 15 minutes. I served it over brown rice, but mashed potatoes or any sides you wish to prepare will go well.

INGREDIENTS

1 teaspoon olive oil

3 tablespoons butter, divided

1-pound boneless skinless chicken thighs cut into bite-size pieces

salt and pepper to taste

2 1/2 tablespoons honey

1 large clove garlic, minced

1 1/2 tablespoons apple cider vinegar

Fresh parsley finely chopped for garnish

INSTRUCTIONS

  1. Heat oil and 1 tablespoon butter in a large non-stick skillet over high heat.
  2. When the butter is melted add the chicken. Sprinkle with salt and pepper, then cook until it changes from pink to white and starts to brown.
  3. Add the remaining 2 tablespoons of butter, honey, garlic, and vinegar. Bring to a simmer. Turn the chicken to coat in the sauce until it is golden and caramelized.
  4. Once the chicken is browned all over, remove from the heat. Serve over choice of side ans drizzle with the sauce from the pan. Garnish with parsley if desired.
