This casserole is the meatloaf and mashed potatoes rolled into one. You may not want to serve anything else, for me it was the entire meal. However, you can always add additional sides.

Cook time: 1-hour Servings: 6

INGREDIENTS:

  • 1 1/2 pounds ground beef
  • 1/4 yellow onion, finely chopped
  • 2/3 cup seasoned bread crumbs
  • 1/3 cup whole milk
  • 1 large egg, lightly beaten
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds potatoes, peeled and cut into 1-inch chunks
  • 1/3 cup unsalted butter
  • 1/2 cup whole milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground pepper
  • 1/2 cup bacon bits, cooked and crumbled
  • 1 cup cheddar cheese, shredded

DIRECTIONS

Step 1 – Preheat oven to 375 degrees F

Step 2- In a large bowl, gently combine the beef, onion, breadcrumbs, milk, eggs, salt, and pepper.

Step- 3 Press the meat mixture into a 9×9- inch baking dish.

Step-4 Bake the meat mixture, uncovered for 15 minutes. Drain the excess fat.

Step-5 While the meat is cooking, in a large pot, add the potatoes with just enough water to cover them, and bring to a boil over high heat.

Step 6- Cook the potatoes until they are tender, about 15 minutes.

Step-7 Drain the water from the potatoes.

Step-8 Add the butter, milk, salt, and pepper to the potatoes and mash to combine.

Step-9 Spread the potato mixture over the meat and top with the cheese and bacon.

Step 10- Bake the meatloaf until the bacon is sizzling, the cheese is bubbling, and the potatoes slightly crisp, about 15 minutes.

Cheat tip: you didn’t hear this from me, lol, but you could use a boxed mashed potato mix. Just saying!
