We all have our favorite meatloaf recipe , possibly one that has been passed down through time. However, sometimes you just want something a little different. This is the one for meatloaf, it is both sweet and savory. Most of all it is delicious.
INGREDIENTS
Meatloaf:
2 lbs. ground beef ( I used 80% lean)
1 tsp. dried parsley
1 teaspoon Italian seasoning
1/2 tsp. ground paprika
1/4 tsp. red pepper flakes
1 tbsp. Worcestershire sauce
1/8 tsp. ground black pepper
1/4 tsp. Kosher salt
1 small onion, dices finely
1 tbsp. minced garlic
1 cup plain bread crumbs( I used Panko)
1 cup milk
2 beaten eggs
1 cup shredded cheddar cheese
Meatloaf Glaze:
1/3 cup ketchup
1 tbsp. tomato paste
3 tablespoons brown sugar
1 tsp. apple cider vinegar
2 tbsp. sweet chili sauce
INSTRUCTIONS.
- Preheat oven to 400 F
- Cover a rimmed baking sheet with aluminum foil. Spray with oil lightly and set aside. You could also use a meatloaf pan.
Make Meatloaf:
- Combine the meatloaf ingredients in the listed order, down to the bread crumbs. Stir well to combine( I use my hands to mix the ingredients together). Add the milk and egg, stir just until combined.
- Add the cheddar cheese and mix well, take care not to overmix.
- Shape the beef mix into a loaf shape and place on baking sheet.
Meatloaf Glaze
- Combine the glazed ingredients in a small bowl until well combined. Brush about 1/2 of the glaze over the meatloaf.
- Bake for about 45 minutes, or until inside temperature is 160 F.
- Brush the remaining sauce all over the surface of the meatloaf and bake an additional 15 minutes.
- Let cool 10-15 minutes before slicing and serving.
Serve with desired sides.
