This is scrumptious version of fried rice that you will want to prepare frequently. It is easy to prepare. The spicy shrimp wakes up the taste. This is a two for one today!

INGREDIENTS
1 teaspoon plus 2 tablespoons sesame oil, divided
3 eggs beaten
2 tablespoons canola oil
2 small onions, finely chopped
6 medium mushrooms, thinly sliced
2 teaspoons minced garlic
1 teaspoon minced fresh ginger root
4 cups cold rice
1 cup frozen peas
1/4 cup soy sauce
1/4 tsp salt
3 green onions, sliced
Optional ingredients: Chinese style mustard, duck sauce and additional soy sauce.
DIRECTIONS
- In a large skillet, heat 1 teaspoon sesame oil over medium high heat. Add eggs to skillet. Cook and stir until set. Remove on a plate; set aside.
- In the same skillet, heat canola oil and remaining sesame oil. Sauté onions and mushrooms for 2-3 minutes or until mushrooms are tender. Add garlic and ginger; sauté 1-2 minutes longer.
- Stir in the rice, peas, soy sauce, salt, and pepper. Chop egg into small pieces; stir into skillet and heat through. Stir in green onion. Serve with mustard, duck sauce, and additional soy sauce if desired.
SPICY SHRIMP
INGREDIENTS
2 tablespoons olive oil
1 lb. extra-large raw shrimp 21-25 per lb., peeled and deveined.
1/2 teaspoon kosher salt
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons chopped parsley for garnish
INSTRUCTIONS
- Heat the olive oil in a large (12-inch) skillet over medium heat.
- Add the shrimp and the spices.
- Cook until the shrimp are cooked through and opaque about 5 minutes. If using extra-large shrimp, place them on the skillet in a single layer and cook for 2-5 minutes per side. For smaller shrimp, cook for a total of about 5 minutes, stirring often.
- Garnish with place on top of Mushroom Fried Rice, top with parsley for garnish.
