This tasty side dish makes a perfect accompaniment to vegetable casseroles and stews. The potatoes cooked in stock with onion and garlic give them a vibrant flavor. It will be hard to believe this was made in a crockpot. Serves 4

INGREDIENTS

  • 3 tbsp. butter
  • 1 large onion, thinly sliced
  • 2-4 cloves garlic, finely chopped
  • 1/2 tsp. dried thyme
  • 2 lb. waxy potatoes, very thinly sliced
  • 2 cups boiling vegetable stock
  • salt and ground pepper

DIRECTIONS

  1. Grease the inside of the cooking pot with 1 tbsp, of the butter. Layer a thin layer of onions on the base of the pot, then sprinkle over a little of the chopped garlic, dried thyme, salt, and ground black pepper.
  2. Arrange an overlapping layer of potato slices on top of the onion mixture. Layer the ingredients until all the onions, garlic, herbs, and potatoes are used up, finishing with a layer of sliced potatoes, dot with remaining butter.
  3. Pour just enough of the stock into the pot to cover the potatoes. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the potatoes are tender. Serve sprinkled with a little salt and ground black pepper.
