Serves 8
INGREDIENTS

(2) 15.5 oz can’s Cannellini beans5oz cans Cannellini Beans

2 links Italian sausage casing removed

2 zucchini thinly sliced into half moons

1 tbsp. water or white wine

1/2 teaspoon salt

1/4 cup olive oil

1/4 cup Parmesan cheese

3 cloves garlic minced

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes

DIRECTIONS

  1. In a large pan over medium high heat , add the sausage links. Break up the sausage and brown until the cooked sausage crumbles, about 6 minutes.
  2. Add the zucchini slices, the water or wine, and salt. Cook for 4 minutes or until zucchini starts to soften
  3. Add the garlic and olive oil and cook for 1 minute.
  4. Add the beans and cook for 2 minutes, stirring occasionally . Top with Parmesan.
  5. Serve with toasted bread brushed with olive oil.
