This easy-to-prepare meal is packed with flavor, the bell peppers, mushrooms, onions, and garlic come together to make a delicious comforting meal. Note: prep all ingredients before constructing the recipe.

INGREDIENTS
- 6 boneless, skinless, chicken thighs
- kosher salt and fresh ground pepper to taste
- 2 tablespoons olive oil
- 1 large sliced onion
- 2 medium bell peppers, sliced, any color
- 3 cloves garlic, minced
- 1 28 oz can crushed tomatoes
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon basil
- 1/2 teaspoon red pepper flakes (optional)
- 9 ounces sliced mushrooms
- 1/4 cup capers, drained
- fresh parsley, chopped
INSTRUCTIONS
- Season the chicken with salt and pepper on both sides and add to slow cooker.
- Add the olive oil, onion, bell peppers, garlic, crushed tomatoes, chicken broth, dried oregano, dried basil, red pepper flakes, and mushrooms to the slow cooker. Gently toss.
- Cover and cook on low for 4-6 hours until chicken is tender and cooked through.
- 30 minutes before serving, add the capers to the slow cooker. Stir to combine.
- Taste and adjust seasoning as needed. Serve the chicken cacciatore garnished with fresh parsley, over pasta or rice.
