This easy-to-prepare meal is packed with flavor, the bell peppers, mushrooms, onions, and garlic come together to make a delicious comforting meal. Note: prep all ingredients before constructing the recipe.

INGREDIENTS

  • 6 boneless, skinless, chicken thighs
  • kosher salt and fresh ground pepper to taste
  • 2 tablespoons olive oil
  • 1 large sliced onion
  • 2 medium bell peppers, sliced, any color
  • 3 cloves garlic, minced
  • 1 28 oz can crushed tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 9 ounces sliced mushrooms
  • 1/4 cup capers, drained
  • fresh parsley, chopped

INSTRUCTIONS

  1. Season the chicken with salt and pepper on both sides and add to slow cooker.
  2. Add the olive oil, onion, bell peppers, garlic, crushed tomatoes, chicken broth, dried oregano, dried basil, red pepper flakes, and mushrooms to the slow cooker. Gently toss.
  3. Cover and cook on low for 4-6 hours until chicken is tender and cooked through.
  4. 30 minutes before serving, add the capers to the slow cooker. Stir to combine.
  5. Taste and adjust seasoning as needed. Serve the chicken cacciatore garnished with fresh parsley, over pasta or rice.
