This recipe serves 2, ready in 30 minutes. The secret sauce is the bomb!

INGREDIENTS

Secret Sauce

1/2 cup mayonnaise

2 tablespoons ketchup

1 1/2 tablespoons pickle relish

2 teaspoons apple cider vinegar

Kosher salt and freshly ground pepper

BURGERS

12 ounces ground beef ( I used ground lamb)

Salt and black pepper

3 tablespoons cannola oil

2 tablespoons yellow mustard

2 slices American cheese( I used pepper jack)

2 potato buns

Butter for the buns

2 leaves Romaine lettuce 4 to 8 slices bread and butter pickles

INSTRUCTIONS

To make sauce: In a small bowl whisk together the mayonnaise, ketchup, relish, and vinegar. Season to taste with salt and pepper.

To make burgers: Divide the ground beef in half and form into patties. Liberally season both sides and edges with salt and pepper.

Heat a large cast iron skillet over medium high heat. Add the oil and the burgers. Use a spatula to firmly smash the burger into the skillet. Cook on one side until a crust forms on the bottom, about 5 minutes. Evenly spread the mustard on the raw side, then flip the burgers so mustard is on the bottom. Smash the burger again, and cook another 5 minutes(for medium). Place one slice of cheese on each burger to melt. Transfer burgers to a plate and let rest for 5 minutes.

Meanwhile toast the buns until golden brown, Spread lightly with butter.

To assemble spread the secret sauce on the buns, place the lettuce on bottom bun, followed by pickles, then the burger patty.

Bonus recipe: Herbed Fresh Asparagus

Total time to prepare is 15 minutes, serves 4

INGREDIENTS

1 pound fresh asparagus, trimmed

2 garlic cloves minced

1/2 teaspoon dried basil

1/4 teaspoon dried rosemary, crushed

1/4 teaspoon dried thyme

1/8 teaspoon salt

1/8 teaspoon pepper

2 teaspoons olive oil

1/4 cup roasted sweet red peppers, drained and chopped

2 tablespoons chopped walnuts

DIRECTIONS

  1. In a large skillet, bring 1/2 inch of water to a boil. Add asparagus, cover and boil for 3-5 minutes until crisp-tender. Drain and keep warm.
  2. In the same skillet, sauté garlic and seasonings in oil until tender. Add the asparagus, red peppers, and walnuts; heat through.
