This is such a tasty dish, the smoke flavor and the sweetness from the honey combine to render a unique taste. Please be careful to not overcook the salmon, if you do it will be dry.
Serves:4
INGREDIENTS
2 tablespoons flour
1/2 teaspoon salt
2 tablespoons honey
2 teaspoons liquid smoke
1/2 tablespoon lemon juice
1/2 teaspoon smoked paprika
1 garlic, minced
4 (6oz) salmon fillets
2 teaspoons extra virgin olive oil
INSTRUCTIONS
- In a shallow dish mix the flour and salt
- In a small bowl, combine the honey, liquid smoke, lemon juice, smoked paprika, and garlic.
- Coat top and bottom of the salmon fillets with the flour/salt mixture.
- Use a basting brush, brush the oil on a large skillet or grill pan set over medium high heat.
- Add salmon to the pan, skin side down.
- Using the same basting brush you used for the oil, brush the smoked honey mixture over the top of the salmon fillets.
- Flip the fillets and brush the skin side of the salmon with the honey mixture.
- Allow salmon to cook 4 minutes, flip and cook an additional 3 minutes.
This salmon goes great with a Spring Vegetable mixture, such as zucchini, squash, red bell peppers, and onion. Any side dish of your choice will do.
