This dish is a wholesome meal with protein and vegetables as well as delicious flavor. Easy on the pocket book and quick to prepare. Prep time is 10 minutes and cook time is 20 minutes.

INGREDIENTS

2 cups canned green beans, drained and rinsed

2 cloves garlic, minced

1 large bell pepper, finely chopped

1/2 large red onion, chopped

2 cups frozen corn( I used fresh cut off the cob)

2 cups cooked brown rice

1 whole lime, juiced

1 tbsp chili powder

1 tbsp paprika

1 tbsp cumin

1/2 tsp salt

1/4 tsp ground black pepper

1 tbsp oil

1/2 large avocado

1/2 cup sour cream

1 cup cheddar cheese

1/4 cup parsley

INSTRUCTIONS

  1. In a large skillet, over medium high heat add the oil, onion and peppers, saute 5 minutes
  2. Add garlic and saute for another 3 minutes
  3. Add the chili powder, paprika, cumin, salt, and black pepper. Stir into the onion and pepper mixture until well incorporated
  4. Next, add the black beans, corn, and brown rice. Stir well to combine all ingredients. Lower heat to medium low and cook for 10 minutes until beans, corn, and rice are heated through.
  5. Cut the lime in half and squeeze the juice over mixture
  6. Serve with diced avocado, sour cream, and cheddar cheese
