The holidays are full of hustle and bustle, this beautiful easy to prepare sheet pan dinner can be a lifesaver for family and guests! And its oh so good!!!!

Cook time: 30 -35 minutes Serves:4

INGREDIENTS

  • 1 (12 oz package precooked sausage (try using chicken or apple sausage), cut into 1/2 inch rounds
  • 2 medium red or yellow bell peppers, sliced (I used one of each)
  • 6 green onions, cut into 2-inch pieces
  • 2 cups cherry tomatoes
  • 2 cups sugar snap peas
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons paparika
  • 1 tablespoon dried onion flakes
  • 1 tablespoon dried parsley
  • 1 teaspoon coarse kosher salt
  • 1/2 teaspoon black pepper (fresh grated)
  • Bread of your choice, toasted and warm for serving
  • Parmesan cheese, optional, fresh grated for garnish

DIRECTIONS

  1. Preheat the oven to 400 F.
  2. On a shallow pan, ad the sausage, bell peppers, green onions, cherry tomatoes, and sugar snap peas, toss lightly to mix.
  3. Drizzle the sausage mixture with the olive oil and toss lightly to coat.
  4. Sprinkle the mixture with thr paprika, onion flakes, parsley. kosher salt, and black pepper, toss to coat.
  5. Arrange the mixture in a single layer on the pan.
  6. Bake until the sausage and vegetables are roasted, 30-35 minutes.
  7. Serve immediately with the toasted bread and sprinkle with the Parmesan cheese.
