INGREDIENTS

1 tbsp. olive oil

1 large onion, finely chopped

kosher salt

fresh ground pepper

1 1/2 tbsp. fresh grated ginger

2 cloves garlic

1 tbsp. curry powder

1 cup long grain white rice

1 pound medium peeled and deveined shrimp

1 cup frozen peas, thawed

1 cup chopped fresh cilantro

lemon wedges (to serve)

DIRECTIONS

Step 1

Heat the oil in a large skillet over medium heat. Add the onion, season with 1/4 tsp. each of salt and pepper. Cook covered, stirring occasionally, until tender, 6-8 minutes. Add the garlic and ginger and cook, stirring, for 2 minutes. Add the curry powder and cook, stirring, for 1 minute.

Step 2

Add the rice and stir to combine in the onion mixture. Stir in 2 cups water and bring to a boil. Reduce the heat and simmer, covered for 15 minutes.

Step 3

Fold in the shrimp and peas into the partially cooked rice. Cook covered until the shrimp is opaque throughout and the rice is tender. 4 to 5 minutes.

Serve hot, top with cilantro and serve with lemon wedges.
