Elevate your Super Bowl Party by serving these mini lobster burgers with chipotle mayo. The Chipotle mayo will wake up your taste buds, giving them a jolt!

Prep Time: 25 min. Chill Time: 15 min. Cook Time: 25 min.

INGREDIENTS

  • 3 cups cooked chopped lobster meat
  • 1/3 cup finely chopped green onion
  • 1/2 cup plus 2 Tbsp. Italian seasoned bread crumbs
  • 2 tsp. Old Bay seasoning
  • 2 eggs, beaten
  • 2/3 mayonnaise, divided
  • 3 tablespoons canola oil
  • 1/2 tsp. canned chipotle peppers in adobo finely chopped or minced
  • 14 Hawaiin slider buns
  • 2 cups Baby spinach
  • 1/3 cup thinly sliced red onion

DIRECTIONS

  1. Place lobster, green onion, bread crumbs, Old Bay, eggs, and 1/3 cup mayonnaise in a food processor, and pulse a few times until finely chopped. Cover and refrigerate for 15 minutes.
  2. Preheat oven to 350F. Using a 1/4 cup, measure to form into 14 mini burgers.
  3. Heat half of the oil in a large nonstick skillet over medium heat. Cook burgers in 2 batches for five minutes on each side.
  4. Transfer burgers to a baking dish, and bake for 5 minutes until the internal temperature reaches 160 F.
  5. While burgers are cooking, mix the remaining mayonnaise and chipotle in a small bowl.
  6. Toast rolls if desired and place burgers on the bottom halves of the rolls. Top each with a dollop of Chipotle mayo, a few Baby spinach leaves, and sliced onion. Cover with the top half of the roll, and serve warm.
